Jaffa Bundt Cake

Jaffa Bundt Cake
Recipe type: Cakes, Biscuits & Slices
  • 100g non-dairy choc chips
  • 1 orange, quartered, cored and seeds removed
  • 1 cup caster sugar
  • 125g melted non-dairy margarine
  • ½ cup apple puree (120g)
  • 1 ¼ cups self-raising flour
To ice (optional)
  • 90g non-dairy chocolate
  • ¼ cup coconut cream
  1. Preheat oven to 170˚C and grease a Bundt cake tin
  2. In a food processor add the choc chips, orange, caster sugar, margarine and apple puree and process until there are no chunks of orange left (this won't take long)
  3. Add self-raising flour and process briefly until just combined
  4. Pour into prepared Bundt tin and bake for 40-45 minutes or until a skewer comes out clean
To ice (optional)
  1. Allow cake to cool completely
  2. Combine chocolate and coconut cream in a microwave-safe bowl and microwave in 10 second bursts and stir until smooth and combined
  3. Splash onto cake and streak downwards
  4. Allow to sit to set
