Lemon lavender ladies

Lemon & Lavender Ladies

2 tablespoons of fresh lavender flowers (off the stem)
1½ cups Self Raising Flour
100 grams table spread
¼ cup raw sugar
1 tablespoon freshly squeezed lemon juice
2 tablespoons rice malt
1 teaspoon grated lemon zest
½ teaspoon salt

Soak the lavender flowers to remove any dust or insects
Pat dry between paper towels
Using a mortar & pestle, grind the flowers until they become fragrant. Do not mush

Preheat oven to 230oC & line a tray with baking paper or silicone

Prepare dough by placing table spread and sugar into a mixing bowl and cream using an electric beater
Add rice malt and lemon juice. Continue to beat
Add flour and lemon zest & knead with hands, add lavender & continue to knead until dough is formed

Sprinkle your workbench with flower & roll out dough to a 1 cm thickness

Cut out ladies and place on baking tray ensuring they are not touching
Bake for 7 minutes or until just turning golden
They will be soft, so gently transfer to a cooling rack where they will firm up

Makes 24 (You can cut any shape)
