These Pear & Bran Muffins are fantastic for morning tea or afternoon tea….in fact they’re fantastic at at time!
2 pears, peeled and chopped
1 ¼ cups of bran
¾ cup soy milk
¼ cup vegetable oil
2 egg equivalent (I use Orgran No Egg)
1 cup plain flour
½ cup raw sugar
2 ½ teaspoons baking powder
½ teaspoon salt
1. Preheat oven to 205oC and oil a muffin tray that holds 12
2. Combine the chopped pears, bran and soy milk into a bowl and stand for 5 minutes
3. Add egg equivalent and oil
4. In a separate bowl sift the flour, sugar, baking powder and salt. Stir to mix
5. Add the flour mixture to the pear mixture and stir until just combined. Do not mix vigorously. The mixture will be quite thick
6. Spoon into the muffin tray evenly. About two thirds full
7. Bake for 20 minutes
8. Remove and cool on a wire rack
