60g vegan margarine
60g sugar (I use raw)
pinch of salt
3/4 cup of extra sugar
1 large lemon WELL pricked all over with a fork & deep too
1 cup self raising flour
2 tablespoons of apple puree
3/4 cup of boiling water
Cream margarine & 60g of sugar with electric beaters. All sifted flour, salt & apple puree. Blend. It will look more like a crumble than a mixture. Place lemon in middle of pie dish. Place crumble around lemon & gentle press down into place. Mix boiling water & 3/4 cup of sugar. Spoon over crumble & lemon. Bake at 180oC for 30 minutes.
Serve with soy ice-cream. Very tasty!
