Sweet & Sour Cherry Cake

Ingredients:

2 ½ cups of plain flour
2 teaspoons baking powder
1 teaspoon baking soda
¼ teaspoon salt
2 tablespoons Vitarium (sugar free) strawberry drinking mix (you could just use 2 tablespoons of raw sugar if you don’t have this)
330 grams (1 can) sweetened condensed milk
1 cup water
2 tablespoons white vinegar
2 tablespoons vanilla essence
½ cup melted vegan margarine
Jar of sour cherries – approximately 300 grams

Optional (1): a drop or two of pink food colouring
Optional (2): Replace water with juice from cherries

Method :

Preheat oven to 180oC

Oil & line a small lasagna tray with baking paper

In a large bowl, sift together the flour, baking powder, baking soda, & salt. Then mix in sugar free strawberry mix.

Make a well in the dry ingredients & using a whisk, add the wet ingredients one at a time:

·      Condensed milk
·      Water (or option 2)
·      Vanilla essence
·      Vinegar
·      Melted margarine
·      This is where you decide if you want to add some pink food colouring (Option 1)

Pour batter into prepared tray & cook for 50 minutes.  Use a toothpick to check if done.  (I check at the 45 minute mark)

Leave the cake in the tray to totally cool & then lift/slide out carefully

    Hi Nikki, Im keen to try out this recipe – I was wondering if you could please tell me specifically what size lasagne dish to use? And Im assuming you mean a glass dish? Any reason for this as opposed to a regular springform pan for example?

      Hi Lisa,
      You wont be disappointed. It is beautiful! The lasagne tray I use is 28cm x 20cm (according to my trusty ruler) & is ceramic. I do have a glass one the same size & would use that, but it’s six one way, half a dozen the other. The mixture is slightly dense so I’m not sure how it would go in a regular pan. With a longer tray it doesn’t have the depth to cook & cuts into nice square pieces. Let me know how you go.

    Hi Nikki, certainly looks delicious. I’m just a bit confused with the condensed milk ingredient. Is there a vegan condensed milk?
