Stir-fried pak choy with cashews
Recipe type: Mains
  • 3 bunches of pak choy, roughly chopped
  • 250gr firm tofu, cut into bite size pieces
  • 3 tablespoons of satay sauce
  • 2 tablespoons sesame oil
  • ½ cup sweet chilli sauce
  • ¼ cup soy sauce
  • 2 teaspoons crushed garlic
  • Handful of raw cashews
  1. Heat sesame oil in a wok
  2. Stir through satay sauce & then add tofu. Toss occasionally until tofu browns
  3. Add all other ingredients & toss until combined, warmed through & the pak choy has wilted
  4. Serve immediately on rice
