Marinated Tofu with Chimichurri Sauce

Ingredients
Marinated Tofu
  • 250gram block of firm tofu, cut into good sized cubes
  • 1 onion, peeled & grated
  • 2 teaspoons crushed garlic
  • 2 tablespoons orange juice
  • 1 tablespoon olive oil
  • 1 teaspoon cumin powder
  • Skewers
Chimichurri Sauce
  • 2 cups fresh parsley leaves
  • 1 cup fresh coriander leaves
  • ½ cup fresh oregano leaves
  • 6 spring onions, including stalks
  • 4 teaspoons crushed garlic
  • ¾ cup of olive oil
  • 2 tablespoons red wine vinegar
  • 2 tablespoons lemon juice
  • Salt & pepper to taste
Instructions
Marinated Tofu
  1. Place onion, garlic, orange juice, olive oil & cumin into a bowl & mix
  2. Gently toss through tofu to coat, cover & marinate for a few hours or overnight
Chimichurri Sauce
  1. Place all ingredients into a blender & blend until combined
  2. Keep chilled until needed
  3. Place 3 cubes of tofu on a skewer & repeat until all tofu has been used
  4. Cook on high heated grill
  5. Serve warm & dollop with chimichurri sauce
Notes
Suggestion: Serve with a side of salad & potato wedges
