Nut Balls
Recipe type: Mains
  • 400 grams cooked butter beans (rinsed)
  • 1 cup raw cashews
  • ¼ cup smooth peanut butter
  • 2 teaspoons Tabasco sauce
  • 2 tablespoons tamari
  • 1 teaspoon paprika
  • 1 cup of stale breadcrumbs (make sure there is no milk in them if store bought)
  • Oil for deep frying
  • Sweet chilli sauce for serving
  1. Heat oil in a small saucepan (medium to high)
  2. Place all ingredients (apart from oil & sweet chilli sauce) into a food processor and blend into a smooth mixture. Scrape the sides down when needed. The mixture will look crumbly – don’t worry. It will bind together
  3. Pour into a bowl & using your hands squeeze enough mixture together to make an over-sized, large marble. If you do not squeeze the mixture together firmly enough they will disintegrate in to the oil!
  4. Drop balls into hot oil in batches until lightly browned and crisp; drain on absorbent paper
Serving suggestion:
  1. Serve on noodles with pan fried pak choy (pan fried in garlic margarine), sliced tomato and drizzled with sweet chilli sauce
