Peppermint Pancakes

Peppermint Pancakes
Recipe type: Desserts
  • 1 cup self-raising flour
  • 1 cup plain flour
  • ¼ cup caster sugar
  • 2 ½ cups of non-dairy milk
  • 2 handfuls of fresh spinach
  • 1 teaspoon peppermint essence
  • 1 handful of choc-chips or to taste
  1. Sift flour & caster sugar in a large bowl
  2. Blend milk, spinach & essence until smooth in a high speed blender
  3. Add liquid to flour mix & whisk until combined
  4. Spoon a ladle full of mixture onto a pre-heated, greased fry pan over a medium to high heat
  5. Sprinkle with choc-chips
  6. Flip, cook & serve with non-dairy ice-cream, maple syrup &/or fruit
