Serves: 2 large pizzas
Ingredients
  • ½ small-medium cauliflower, broken into florets & steamed until just tender
  • 2 tablespoons tandoori spice mix
  • 300 gram silken tofu
  • 5 tablespoons lemon juice
  • 2 tablespoons maple syrup
  • 1 purple onion sliced
  • 2 teaspoons crushed garlic
  • 6 silver beet leaves, stalks discarded and leaves ripped into pieces
  • 2 celery stalks chopped
  • 2 pizza bases (bought or made)
  • ¼ cup nutritional yeast flakes (this will be enough for 2 pizzas)
  • 2 tablespoons olive oil & extra to drizzle
  • ½ teaspoon cumin
  • 1 medium green capsicum chopped
  • 1 large tomato chopped
  • Fresh coriander leaves to garnish
Instructions
  1. Pre-heat oven to 180oC
  2. In a food processor, combine silken tofu, 2 tablespoons lemon juice and maple syrup
  3. Using ½ of the silken tofu mixture, toss through cauliflower and tandoori spices until combined. Refrigerate until ready for use
  4. Heat 2 tablespoons of olive oil and cook celery, onion and garlic until soft
  5. Add silver beet and 2 tablespoons of lemon juice and toss until silver beet starts to wilt. Remove from heat
  6. Drizzle olive oil over pizza bases/dough & brush lightly to spread evenly
  7. Sprinkle evenly with nutritional yeast flakes
  8. Top with silver beet mixture, then cauliflower mixture
  9. Heat until browned and base is crisp (approx 20 mins but times will vary)
  10. Whisk cumin & 1 tablespoon of lemon juice into remaining tofu mixture
  11. Sprinkle pizza with fresh tomato, capsicum and garnish with coriander
  12. Serve with cumin & tofu mixture
