Vegan Coconut Slice

Vegan Coconut Slice
Recipe type: Cakes, Biscuits & Slices
  • 2 cups of plain flour
  • 1 cup caster sugar
  • 125g of non-dairy margarine
  • 9 tablespoons aquafaba (3 tablespoons is equivalent to 1 egg)
  • 1 teaspoon vanilla essence
  • ¾ cup of strawberry jam (you could use any flavour you fancy)
  • 2 cups of desiccated coconut
  1. Preheat oven to 180°C. Line a lamington pan (24cmx30cm)
  2. In a large bowl, add flour, ½ cup caster sugar & margarine. Rub in with fingertips until you have a breadcrumb consistency
  3. Add 3 tablespoons aquafaba & vanilla essence. Knead to form a dough
  4. Press dough into base of pan & bake for 15-20 minutes, or until a light golden brown
  5. Spread jam over warm base – set aside
  6. Whisk the remaining 6 tablespoons of aquafaba & ½ cup caster sugar together until combined. Stir through coconut
  7. Spread over jam & bake for 25 minutes or until golden
  8. Cool completely in pan. Cut in pieces to serve.
