Hot cross buns - good

Vegan Hot Cross Buns


Makes 12

Allow 2 hours rise time



4 cups plain flour

2 x 7g sachets dried yeast

¼ cup caster sugar

1 ½ teaspoons all spice

Pinch of salt

1 ½ cups sultanas

40 gram margarine

300 ml soy milk

¼ cup apple puree


Flour paste:

¼ cup plain flour

½ teaspoon caster sugar

3 tablespoons water



1/3 cup of water

2 tablespoons caster sugar


  1. In a large bowl combine flour, yeast, sugar, all spice, salt and sultanas. Mix well
  2. Melt margarine over a medium heat and add milk towards the end and stir until luke warm
  3. Add milk mixture and apple puree to flour mixture and combine with a knife until it starts to come together then use your hands
  4. Turn out onto a flour counter and knead for 10 minutes until you have a soft dough (keep plastic wrap to use later in the recipe)
  5. Place dough into a lightly oiled bowl, cover with plastic wrap and sit in a warm and draught free place until dough has doubled in size. (About 1 hour to 1.5 hours)
  6. Line a large baking tray with non-stick baking paper or silicone.
  7. Punch dough down to original size
  8. Knead on a lightly floured counter and shape into a roll
  9. Divide into 12 even portions by gently pressing a line into the roll to ensure you get even portions. Then cut
  10. Shape each portion into a ball
  11. Place balls on lined tray about 1 cm apart and cover with plastic wrap from earlier
  12. Set aside in a warm and draught free place until buns have doubled in size (about 30 minutes)
  13. Preheat oven to 190oC
  14. Make flour paste: Whisk flour, sugar and water together in a bowl until smooth. (Add a tiny amount of water at a time if to thick)
  15. Pipe onto buns to form crosses
  16. Bake for 20-25 minutes or until buns are cooked through
  17. Make glaze: Place water & sugar into a small saucepan and stir over a medium heat until sugar has dissolved. Bring to boil for 5 minutes.
  18. Brush glaze over warm hot cross buns
  19. Serve warm
  20. Best eaten immediately……
