Broccoli and Potato Soup

Ingredients
  • 1 head of broccoli
  • 1 onion, chopped
  • 1 medium to large potato, diced
  • ¼ cup plain flour
  • 3 cups of vegetable stock
  • ¼ teaspoon nutmeg
  • 1 cup grated vegan sharp cheddar (I use vegusto)
  • 1 teaspoon Worcestershire sauce
  • 1 ½ cup soy milk
  • Salt & pepper to season
  • Oil
Instructions
  1. Break broccoli into small florets, slice the stalk & cut into small dices
  2. In a large pot heat some oil & sauté the broccoli florets, stem pieces, onion & potato until softened.
  3. Add flour & nutmeg & coat all the ingredients
  4. Stir in stock & bring to a boil
  5. Reduce heat to a simmer & cook until vegetables are tender
  6. Remove from heat & stir through milk, Worcestershire & cheese (return to a low heat if needed)
  7. Season with salt & pepper
  8. Enjoy!
