Cherry tomato and pasta soup

Cherry tomato and pasta soup

Ingredients
  • 3 tablespoon oil
  • 1 onion, chopped
  • 24 cherry tomatoes, quartered
  • 1 carrot, sliced
  • 1 cup cauliflower florets
  • 1 teaspoon salt
  • 1 teaspoon cracked pepper
  • 2 litres vegetable stock
  • 250 grams grano pasta
  • Fresh basil leaves to garnish
Instructions
  1. Heat oil in a large pot and fry the onion for a few minutes
  2. Add tomatoes, carrot and cauliflower. Stir to combine
  3. Add salt & pepper and stir to coat
  4. Add stock & bring to a boil
  5. Turn down heat & simmer for 10 minutes
  6. Add pasta, stir
  7. When pasta is tender, serve with fresh basil
