Coconut and Cauliflower Soup

Coconut and Cauliflower Soup

Ingredients
  • 400 ml full coconut cream
  • 800 ml vegetable stock
  • 1 teaspoon sliced lemon grass
  • 2 spring onions sliced, white pieces only
  • 4 kaffir lime leaves (optional)
  • 250 gram of cauliflower florets
  • 8 cremini mushrooms thickly sliced
  • ½ teaspoon salt
  • 1 tablespoon lime juice
  • 1 tablespoon fish sauce
  • Garnish with spring onion greens & lime wedges
Instructions
  1. Heat coconut cream, stock, lemon grass, lime leaves (if using) & white parts of spring onions in a large pot & bring to a boil then simmer for two minutes
  2. Add cauliflower, mushrooms & salt & simmer for a further 30 minutes
  3. Season with lime juice & fish sauce
  4. Serve garnished with green spring onion stalks & lime wedges
