Corn, cauliflower and pasta soup

Corn, cauliflower and pasta soup
Recipe type: Mains
  • 2 tablespoons of olive oil
  • 1 brown onion chopped
  • 1 teaspoon crushed garlic
  • 400g can of corn kernels (or fresh if you have it!)
  • 1 ½ litres of vegetable stock
  • ¼ small cauliflower cup into florets
  • 1 cup of super small pasta
  • 1 handful of spinach torn apart roughly
  • 1 cup soy milk
  • Salt to taste
  1. Heat oil in a large saucepan and add onion. Reduce to medium & cook for about 10 minutes then add garlic and stir through
  2. Add corn, cauliflower and stock to pan. Bring to boil & add pasta. Reduce heat & cook until pasta & cauliflower are soft – approx 15 minutes
  3. Add spinach, milk & salt. Heat through then serve
