Ingredients
  • 8 cups vegan chicken stock
  • 1 ½ cups cous cous
  • 2 teaspoons crushed garlic
  • 2 teaspoons crushed ginger
  • I – 2 red chilli, de-seeded & thinly sliced
  • 2 bunches Asian choy sum, sliced (approx 3-4 stalks per bunch)
  • 2 tablespoons tamari
  • 2 tablespoons sesame oil
  • ½ teaspoon sriracha sauce
  • Vegan parmesan to garnish
Instructions
  1. In a large saucepan add the stock & cous cous & bring to a boil. Reduce heat & simmer for 6-8 minutes, stirring occasionally
  2. Add garlic, ginger, chilli & choy sum, stir through & cook for a further few minutes until the choy sum has wilted & the cous cous is tender
  3. Stir through tamari, sesame oil & sriracha
  4. Serve immediately garnished with parmesan
  5. **You can use any greens in this soup. E.g.: Pak choy, gai lan or silverbeet/chard
