Cream of Mushroom Soup

Cream of Mushroom Soup
Recipe type: Mains
  • 300 grams of mushrooms, sliced
  • ½ onion chopped
  • 2 teaspoons crushed garlic
  • 2-3 tablespoons of table spread
  • 2 tablespoons quinoa flour (can us plain or gf flour)
  • 2 cups of Massel faux chicken stock
  • ¾ cup of water
  • 2 tablespoons of instant soy milk powder
  • 2 tablespoons of corn flour
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • ¼ teaspoon nutmeg
  1. Melt table spread in a large saucepan and add onions, garlic and mushrooms. Cook until onions are soft & mushrooms have a tinge of brown to them
  2. Blend in quinoa flour
  3. Add faux chicken stock & heat through until slightly thickened
  4. Add salt, pepper, nutmeg, cornstarch & soy instant milk powder to water & combine
  5. Add this mixture to the pot and stir until heated through
  6. Eat!
