Faux Bo (Pho Bo) Soup

Faux Bo (Pho Bo) Soup
Recipe type: Soup
Noodle Soup:
  • ¼ cup sesame oil
  • 3 litres (12 cups) cold water mixed with 2 tablespoons faux beef stock powder (can substitute with a vegetable stock)
  • 2 brown onions chopped
  • 1 teaspoon crushed ginger
  • 5 whole star anise
  • 2 cinnamon sticks
  • 1 teaspoon black peppercorns
  • 5 whole cloves
  • 1 tablespoon coriander seeds
  • 1 tablespoon soy sauce
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoons lime juice
  • 200g thick rice noodles or Pad Thai noodles
  • An approximate 200gram block of seitan (recipe below) marinated for a few hours, turning occasionally (to ensure all sides are coloured) in 1 cup of beetroot juice mixed with 2 tablespoons maple syrup to give a pink outer layer and then thinly sliced (use a food processor). You could also roll the seitan in red wine if you have no beetroot juice
  • 2 cups fresh bean sprouts
  • 3 fresh spring onions, trimmed and thinly sliced diagonally
  • 2 fresh red chillies, thinly sliced
  • Generous handful of Thai basil OR regular basil
  • Generous handful of fresh coriander
  • Lime wedges to serve
Faux Bo Seitan
  • 2 ½ cups of gluten wheat flour
  • 1 cup nutritional yeast flakes
  • 1 tablespoon of powdered vegetable stock
  • 2 ¼ cups of cold water
  • 2 tablespoons olive oil
  • 2 tablespoons tamari
  • Plastic cling wrap
Noodle Soup:
  1. Place the sesame oil, water & stock, onion, ginger, star anise, cinnamon, peppercorns, cloves and coriander seeds in a large saucepan over a high heat. Bring to boil. Reduce heat to low and simmer for 1 hour. (Can be made the day before) Remove from heat and set aside to cool slightly. Strain through a cheese cloth into a clean saucepan. Discard remaining solids.
  2. Place the soup over a high heat & bring to a simmer. Add the soy, Worcestershire sauce and lime juice and stir to combine. Taste & season with salt, pepper & extra lime juice if needed.
  3. Place the noodles in a large heatproof bowl & pour over plenty of boiling water. Set aside for 5 minutes to soak. Drain well. Divide noodles and seitan evenly among serving bowls. Pour over hot soup evenly amongst serving bowls & top with bean sprouts, spring onions, chilli, mint and coriander.
  4. Serve immediately with lime wedges if desired
Faux Bo Seitan
  1. Mix all the dry ingredients in a large bowl. Using gloves & acting quickly pour in all liquids and mix with hands until all combined. Don’t worry about the strange texture
  2. Prepare steamer
  3. Divide mixture into three pieces and shape into log form
  4. Steam for 35 minutes
  5. Allow to cool then cut into 200 gram blocks and freeze or use immediately
