Green Lentil and Lemon Soup

Green Lentil and Lemon Soup

Ingredients
  • Olive oil to sauté
  • 2 onions chopped
  • 1 celery stalk chopped
  • 1 carrot peeled & chopped
  • 1 teaspoon crushed garlic
  • 2 medium sized potatoes, cubed & diced
  • 2 cups of cooked green lentils (I cooked mine but a can of cooked lentils could be used)
  • 1 litre of vegetable stock
  • Juice of 1 lemon
  • Salt & pepper to season
Instructions
  1. Heat oil in a large saucepan & add onion, celery and carrot. Sauté for a few minutes
  2. Add garlic & heat through
  3. Add potatoes & stock & bring to a boil. Reduce heat until potatoes are just cooked enough to skewer but not fall apart
  4. Add lentils & lemon juice & heat through
  5. (You can add a little more stock if you wish)
  6. Season with salt & pepper & drizzle with olive oil
