Ingredients
  • 200 grams small cauliflower florets
  • 2 cups of water
  • 2 teaspoons of vegetable stock powder
  • 2 fresh kaffir leaves
  • 2 teaspoons bottled lemongrass
  • ½ teaspoon coriander powder
  • ½ teaspoon crushed ginger
  • 1 spring onion – sliced (including stalk)
  • 1 sliced red chilli (remove seeds if you don’t like super hot foods)
  • ½ teaspoon sugar
  • 2 tablespoons mirin
Instructions
  1. Place water, kaffir leaves & stock powder in a saucepan and bring to boil
  2. Stir in lemongrass, ginger and coriander. Allow to simmer for 2-3 minutes
  3. Add in cauliflower & spring onion and simmer until cauliflower is tender
  4. Stir in chilli, sugar and mirin. Simmer for 1 minute
  5. Remove kaffir leaves & discard. Serve immediately garnished with parsley.
