Ingredients
  • 2 tablespoons olive oil
  • 1 cup of vegan bacon, chopped (can be made without this)
  • 2 onions, chopped
  • 2 carrots, chopped
  • 2 celery sticks, chopped – including leaves
  • 1 zucchini, chopped
  • 2 teaspoons crushed garlic
  • 2 x 400g cans of diced tomato
  • 6 cups of vegetable stock
  • 12 LARGE pasta shells or ½ cup macaroni (you be the judge)
  • 1 potato, peeled & chopped
  • 1 x 400g can of chickpeas & liquid
  • Salt & pepper to season
Instructions
  1. Heat oil over a medium heat in a large pot, add bacon & cook until it starts to brown
  2. Add onions, carrots, celery, zucchini & garlic. Cook until soft
  3. Add tomatoes & stock, bring to boil then reduce heat to simmer
  4. Add pasta, potato & chickpeas (including liquid from the can) & simmer until the pasta is tender
  5. Season with salt & pepper
  6. Enjoy!
