One Pot Soup
Recipe type: Mains
  • Olive oil
  • 250g vegan bacon 1 chopped onion
  • 2 teaspoons crushed garlic
  • 400g can of diced tomato
  • 400g can of beans of choice (butter bean, kidney beans or even chickpeas)
  • 1 litre of vegetable stock
  • ¼ cup tomato paste
  • 2 diced zucchini’s
  • 1 small handful of spaghetti broken into pieces
  • Salt & pepper to taste
  • Fresh basil to garnish
  1. In a large pot fry up onion, garlic & bacon for a few minutes
  2. Add tomatoes, beans, stock, tomato paste & zucchini & bring to a boil (salt & pepper to taste)
  3. Reduce heat to low & add spaghetti, simmer until cooked
  4. Garnish with fresh basil
