Spiced Dhal Soup

Ingredients
  • Vegetable oil to fry
  • 1 carrot peeled & chopped
  • 2 celery sticks – sliced
  • 1 onion chopped
  • 2 cups of dried red lentils – rinsed & drained
  • 2.5 teaspoon of crushed ginger
  • 2.5 teaspoon ground cumin
  • 1 teaspoon cayenne pepper
  • 1 teaspoon turmeric
  • 2 litres of vegetable stock
  • Vegan sour cream to garnish
  • Freshly chopped coriander to garnish
Instructions
  1. Heat oil in a large saucepan and sauté onion, carrot & celery for 5 minutes
  2. Add ginger, cumin, cayenne & turmeric & stir in until fragrant. (30 seconds)
  3. Add lentils & stock
  4. Cover & bring to boil
  5. Reduce heat & dislodge lid so not completely covered and cook for 20 minutes or until lentils are tender (stir often to avoid lentils sticking to pan)
  6. Garnish with sour cream & fresh coriander
