Tom Yum Soup

Tom Yum Soup

Ingredients
  • 3 cups of water
  • 2 teaspoons crushed ginger
  • 2 teaspoons lemongrass
  • 2 whole kaffir lime leaves
  • ½ head broccoli, florets
  • 1 carrot, thinly sliced
  • 1 tomato, thinly sliced
  • 1 small onion, chopped
  • 250 grams firm tofu cut into cubes **(I like to pan fry mine first in a small amount of oil & garlic until just golden)
  • 6 button mushrooms, thinly sliced
  • 1 tablespoons tamari
  • 1 teaspoon sugar
  • I chopped spring onion, stalk included (use stalk to garnish)
  • 1 teaspoon dried coriander leaves
  • 1 teaspoon lime juice
  • 1-2 tablespoons Tom Yum paste
  • 1-2 tablespoons soy milk
Instructions
  1. In a large wok boil the water & add ginger, kaffir leaves, lemon grass, all vegetables & tofu
  2. Whilst boiling add tamari & sugar
  3. When the vegetables are tender, turn off the heat (approx. 5 mins)
  4. Mix through spring onion, coriander, lime juice, Tom Yum paste & milk
  5. Garnish with spring onion stalk & serve immediately
