Yellow Split Pea and Herb Soup

Yellow Split Pea and Herb Soup

Ingredients
  • 1 large onion
  • 2 tablespoons oil
  • 1 tablespoon ground turmeric
  • ½ cup yellow split peas
  • 1 head of broccoli – chopped into florets
  • 2 litres water
  • 1 cup basmati rice
  • ¼ cup chopped fresh parsley
  • ¼ cup chopped fresh coriander
  • ¼ cup chopped fresh chives
  • ¼ cup chopped fresh mint
  • 2 tablespoons table spread
  • 1 heaped teaspoon of crushed garlic
Instructions
  1. Chop the onion, heat the oil in deep saucepan and fry until golden brown
  2. Add turmeric, split peas and water and bring to a boil – reduce heat and simmer for 20 minutes
  3. Add broccoli & simmer for a further 10 minutes
  4. Add rice, salt, parsley, coriander and chives and simmer for about 30 minutes or until rice is tender. Stir frequently
  5. Melt the butter in a small frypan, gently fry garlic & toss through mint
  6. Serve soup & sprinkle with mint mixture
